Executive Chef Cornel Ruhland marries exquisite Caspian Osetra and Siberian caviar with top shelf spirits and unexpected bites. “The Caspian Osetra is one of the rarest gourmet foods on earth,” comments the chef. “It has a medium grain with a nutty full flavor while tasting of the sea at the same time.”
The Siberian Sturgeon caviar, special in its own right, has a delicate smaller bead and a full briny flavor. “Both pair perfectly with a true Russian vodka like Stolichnaya Elite or Beluga served directly from the freezer in a frozen glass, neat,” he adds.
The decadent menu also offers a caviar and champagne combo that matches up Siberian Sturgeon with a Perrier-Jouët Belle Epoque Brut 2011, and Gold Osetra with a full-bodied Dom Pérignon Brut 2006. “When pairing, our goal is to make sure there is perfect harmony.”
Chef Ruhland also had a hand in the assortment of creative caviar bites that look as good as they taste, including Peruvian chips combined with sturgeon roe and fresh sour cream, a twice-baked potato with truffle and caviar, and Ahi Tuna tartar with Osetra and Yuzu cream.
