Learn the Delicate Craft of Sushi-making


Promising a summer of delicious discovery, El Secreto’s chef Erik Melendez is launching an interactive two and-a-half-hour sushi-making class this summer.

This new experience invites guests to delve into the artistry of sushi, crafting nigiri, hand rolls, and sushi rolls under expert guidance. “The hands-on experience will help guests gain confidence in sushi preparation and enhance their culinary skills,” said Melendez. The class kicks off with a warm welcome and introduction at Faena’s omakase speakeasy, El Secreto, before transitioning to the kitchen at Pao restaurant where the learning begins.

Participants will gain insights into the history of sushi and master essential techniques, such as making sushi rice and honing their knife skills. The session covers everything from setting up the perfect sushi station and preparing sustainably sourced fish to the correct way to chop vegetables for various types of sushi. Next, students dive into making nigiri, different styles of hand rolls, and California and Rainbow sushi rolls. To further enhance the experience, carefully selected sake pairings will be available, perfectly complementing the flavors of the sushi creations.
