Paul Qui

Paul Qui takes a modernist approach toward food that’s equally playful and authentic, visionary and inspired by tradition. Born in Manila, trained in classic French and Japanese cuisine, Qui is a master at blurring lines between international flavors, fostering culinary innovation.

In Japanese tradition, omakase means “I leave it up to you.” At El Secreto, that trust is honored through line-caught seafood flown in daily and rare global delicacies, each course crafted with discipline, artistry, and reverence. The experience unfolds with intention and restraint, guided entirely by the hands of the chef.

A Secret Garden

Enveloped in black marble and gilded trim, the six-seat sanctuary glows beneath mirrored walls etched by Argentine artist Amaya Bouquet. Seated directly before the chefs, guests witness each precise movement as it unfolds, from the quiet discipline of the blade to the controlled heat of the flame.

The bronze glow casts gold against shadow, creating an atmosphere that feels both cinematic and deeply personal, where every gesture is witnessed and every secret is kept.
